Running a food truck was romantic and all but it was full of difficulties. Operating a kitchen was difficult as is, but food trucks needed to be driven, and fresh ingredients needed to be acquired daily. Also a location needed to be decided and promotion needed to be done. It goes without saying, compared to a real kitchen one must cook in an austere environment.

It didn’t end there. Calculations. Calculations needed to be done while they were cooking. It wasn’t an easy task since the service only truly ends when the customer receives their food.

There were three food trucks that Raphael brought. These food trucks were the larger sized food truck; however, space was still limited compared to the actual kitchen.

Driver seat. While grabbing onto the steering wheel, Jo Minjoon looked at Raphael who was on the passenger side. Raphael was attentively looking at his smartphone for over thirty minutes.

“Raphael.”

“Yes?”

“What are you watching?”

“What? Food trucks videos. Might as well learn some recipes while I’m at it.”

“For someone like you, chef Raphael, how much can you learn from other’s recipes.”

“I never expected you to say something like that.”

Raphael looked at Jo Minjoon with renewed expression. Jo Minjoon replied with his eyes back on the road.

“You said it last time. You came here to learn something. May I ask you what you learned?”

“You seem like I have nothing new to learn here.”

“To tell you the truth, I do feel that way sometimes. Chef Raphael, you don’t even cook and it only feels like you are assisting Chef Rachel. Also, you are checking for our mistakes. It might be the job of a sous-chef, but something tells me it is not as difficult as it seems.”

“You are thinking like that because you have not held the sous-chef position.”

Raphael replied with a smile. He raised his smartphone.

“Look at this.”

“I can’t see. I am driving.”

“Right, I will just tell you. When you look at your smartphone, do you know what it is composed of?”

“Of course not, it’s not like I made it.”

“Yes. Of course. But what about an engineer who designed a smartphone for many years? Just by looking at the design, the engineer knows what parts are being used and how to replicate it by instinct. You know what I mean?”

“… Then chef Rachel reads the kitchen just like that engineer?”

Raphael gave a satisfactory smile at Jo Minjoon’s reply. At a glance, the smile was filled with delight and reassurance. But Jo Minjoon couldn’t see that smile. When he passed a highway sign, he asked.

“How do you read it?”

“It sounds like you are jealous.”

“Who wouldn’t be. Even though I work in the kitchen, I have a hard time discerning chef Rachel’s special features. And chef Raphael, you could see it right?”

“You could see it as well. It’s just that you can’t feel it yet.”

“Can’t you just tell me? What is different, and what I have to learn.”

“You will forget it if I tell you. And you need to experience it yourself. Why should I waste my years of hard work just to tell you?

“Ah, Raphael.”

Raphael laughed at Jo Minjoon’s response. Because of the laughter, Maya who was sleeping in the rear seat woke from her slumber.

“Are we there yet?”

Rather than replying, Jo Minjoon pointed at the highway sign.

Las Vegas 20miles

************

It was a hot day. In her office, Deborah was falling in tune with the sound of the music. It was a calming Jazz that made the body heavier under the hot weather, but she needed something like that. Rather than EDM or club music, she needed something that could cool off her head.

‘At this point, you might even lose the one star that you have.’

It was the last word that a food critic left her. But she was not angry. Since what the critic said was true, and her cooking had hit rock bottom. It was a story that was known throughout the industry. Rose Island of Las Vegas was a curr on the name of Rose Island.

“… is she a failure of Rose Island?”

No one directly mocked her. But Deborah felt that everyone was talking behind her back. That she was dragging down Rose Island. That she lost her touch as a chef a long time ago.

Deborah looked outside the window. Since the restaurant was located in a high rise building, the view from her office was beautiful. And because of this beauty, the Las Vegas branch was in contention for one of the highest-grossing Rose Island restaurants.

But that beauty felt excessive. Did she really fit into this beauty? Did she really have the capability to hold down this place?

Deborah looked at her tablet. News about Rose Island was going viral. The top news was the outcome of the fire that happened. After that was the food truck that was going around the country. Deborah clicked on the one that had the most views. She saw the members of main Rose Island.

“… Even though they are running a food truck, their eyes still look bright. Is it because of the teacher?”

Deborah murmured. The story was full of compliments. But the comment that caught Deborah’s eye was about Jo Minjoon. Was it because made a name for himself, whenever people talked about Jo Minjoon, they mostly looked for the good points. And the comments that she saw was an example of that.

Leo Pang: I finally have a chance to try Jo Minjoon’s cooking. I wish he sold Joe Regiano from that food truck.
Elina Kashani: Wouldn’t Joe Regiano be difficult. It is not an easy dish.
Leo Pang: @Elina Kashani but it is still Jo Minjoon. I am sure he can do anything.
Elina Kashani @Leo Pang You must really believe in Minjoon. Amazing.

Christina Miller: I shouldn’t be saying this but I think it was a good thing that the main Rose Island caught on fire. Since I was able to try Jo Minjoon, no, Rose Island food from a food truck. I would never have this opportunity otherwise. It was the best food that I had in my life. Food truck was quite a unique experience.

Jane Crane: Skills aren’t influenced by the location.

‘…I want to get reactions like these.’

She visited Rachel and the main Rose Island a while ago. She even received some advice from Rachel and juniors like Jo Minjoon. But she still lacked something in her cooking.

“Minjoon, you said that I was too greedy …”

Humans are naturally greedy. Or at least she was. And that greed was holding her back from reaching her full potential in cooking.

That was when the manager opened the office door and cautiously spoke.

“Chef. The members from the main restaurant are here.”

“Oh, I will get going now.”

“Yes. Understood”

When the manager left, Deborah sighed as she looked at the mirror. She raised her lips with her finger. It was time for her to get to work. She didn’t want to show her depressed look.

“… Let’s go, Deborah.”

************

“Teacher!”

Deborah smiled and hugged Rachel. Rachel gave Deborah the look and pushed her aside.

“It’s hot. Why are you like this?”

“It’s because I missed you.”

“You saw me just a while ago.”

Although Rachel sounded like that her expression was welcoming. Deborah looked at everyone else with a welcoming look.

“Welcome. Thank you for coming all the way here.”

“No need for thanks. How have you been?”

“I have been well. How about you Minjoon?”

“So have I.”

Jo Minjoon shrugged as he smiled. Deborah spoke as if she was tired.

“You should take it easy when you travel like this. I heard that you operated the food truck during lunch. Teacher, what would happen if someone collapses.”

“Don’t worry. I won’t make them work more than three hours a day. If they collapse, then it is the problem with their stamina.”

“Wasn’t there someone who collapsed after you said something like that?”

At Deborah’s comment, everyone’s gaze fell on one individual. Jo Minjoon shamefully replied.

“I am not that weak anymore.”

“It has only been one month.”

“… There is a difference. Don’t worry I am confident I won’t collapse.”

“So teacher what brings you here.”

“Haven’t you heard the rumors from others? What I am doing.”

“I have heard the rumors but …”

Deborah didn’t know if she should be excited or nervous. Rachel sat herself down on one of the tables and spoke.

“Have you prepared what I asked of you?”

“…yes.”

“Then bring it. Everyone else take a seat.”

“Can I look at the kitchen?”

The one that spoke was Jo Minjoon. Everyone else just rolled their eyes, while Rachel looked at him with delight and nodded.

“If you want. But make sure you are back before service time.”

“Yes.”

“… Let me go with you.”

When Jo Minjoon left, Anderson as well as other demi-chefs followed. The apprentice chefs wanted to leave as well, but they couldn’t since it would congest the kitchen. Jo Minjoon said a quick greeting before observing them. Javier whispered to him.

“Can you feel the difference?”

“What difference?”

“Chef Rachel’s leadership, and Chef Deborah’s leadership. Do you understand the difference?”

“I am concentrating.”

Jo Minjoon quickly replied before taking keen notice of everything that happened in the kitchen. Location of the equipment, how the ingredients are prepped. What sort of order the demi-chef gave to the apprentice chefs, and how the head chef Deborah oversees everything.

‘Only engineers understand the design of the smartphone…’

Although he couldn’t say that he has a lot of experience, he was confident he had the ability to discern the differences. No, he had to. Because he spent all that time under Rachel, and if couldn’t tell the difference, then he had wasted his time.

It was the difference between a factory worker and an engineer. He knew that at a certain point, he had to move on from being a factory worker to an engineer. Because a factory worker could be replaced easier than an engineer.

Jo Minjoon listened to Deborah’s voice as well as all the other sounds in the kitchen. And his eyes became sharper. To read the flow of the kitchen as well as to discern how the system interacted as a whole. He wondered if he concentrated this hard before. Because of that reason.
